Fernando Calle Dominguez owns two hectares of land in the San Francisco village in Huabal district. The land is planted with caturra, typica, bourbon and catimor and is located at 1820masl. Some years ago Fernando only grew typica, but after a series of coffee leaf rust attacks which decimated his production he switched out infected plants with caturra and then latterly with catimor and as a result the farm is now a mix of different varieties.
Fernando picks and processes all of his own coffee and takes great care in selecting only ripe cherries. Once picked, Fernando ferments his coffee for 30 hours, before washing thoroughly and placing on a lined drying patio where it takes around 7 to 10 days to dry.
