Grown at 1,450 metres above sea level, Finca El Matazano is a small five-hectare farm cared for with real precision, surrounded by fruit trees, timber trees and natural water sources that help create a healthy, shaded environment for the coffee.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eIn the cup, it opens with a sweet pear drop character, before moving into a clean citrus acidity that reminds us of dry white wine. The finish is smooth and mellow, with soft chocolate notes bringing everything back into balance.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eElvin’s connection to specialty coffee runs deep. His father, Francisco Antonio Castillo, was a pioneer in the region, and Elvin now leads the cupping laboratory at CONEXH.
